Our Best Bites Recipes

Okay. So I am LOVING ourbestbites.blogspot.com . Check it out! Here are links to recipes I've tried and LOVED!



Almond Poppyseed Bread - 1 hour was too long. Check at 50 min. and probably done around 55 min. for 2 large loafs. I didn't have any butter flavoring and forgot the vanilla in the glaze and it still turned out delicious! Careful with the glaze---don't let it puddle. It will soak into the bread and make it all mushy.

Candy Cane Kiss Cookies - So easy, cute, and delicous!




Garlic-Herb Scalloped Potatoes - made these for Thanksgiving and were so yummy I'm making them again for Christmas dinner. (I use Boursin cheese from Costco...)




Carmelized Green Beans - Curt, cover your eyes cuz these green beans will knock the socks off ye old 'green bean casserole'. Again, made these for Thanksgiving and are on the Christmas menu as well.

Apple Crisp Recipe

4 medium tart cooking apples, sliced (4 cups)
3/4 cup packed brown sugar
1/2 cup Gold Medal® all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/3 cup butter or margarine, softened
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
Cream or Ice cream, if desired
  1. Heat oven to 375ºF. Grease bottom and sides of 8-inch square pan with shortening.
  2. Spread apples in pan. In medium bowl, stir remaining ingredients except cream until well mixed; sprinkle over apples.
  3. Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve warm with cream. 
This recipe is from the Betty Crocker Website. The only thing we did differently was sprinkle some vanilla, lemon juice and sugar over the apples before the topping. It was delicious, if you do too many apples it won't cook right, so make sure you do medium apples, not large ones! Enjoy!

Korean BBQ Beef Skewers



I stumbled upon the food blog, Our Best Bites {angels sing}. What a find! Real food. Real good. We LOVE a good Korean BBQ and this is the first recipe from the blog I've tried. It was FANTASTIC. Probably the best thing I've barbecued.

The recipe calls for either rice wine or pear juice. I had neither on hand. After a bit of googling I discovered I could use apple juice. Turned out GREAT!

Boston Cream Pie Minis


Made these for a friend's B-Day. Fast and yummy! I used semi-sweet choco chips instead of baking chocolate and it worked just fine. Delicioso!


HONEY MUSTARD KIELBASA & POTATOES


So I'm on a mission to make home-cooked (all the way---not just heat up) dinners. And we have all been happier and healthier. Right now, I'm just proud that I'm cooking up a storm so I'm not concerned about calories, fat and the like. And the kids don't always eat it. But they are learning....

Tuscan Style Chicken Marsala

We have found a delicious meal for you!!!




I picked up this little packet a couple of weeks ago while shopping at WalMart. In the packet section with the gravies and such to be exact. $1.18
WE LOVE IT!!!

You just need some chicken, nushrooms and spaghetti and you are set.

For us: I used one piece of chicken, small can of mushrooms and we have tried both spaghetti noddles and penne noddle and we prefer the spaghetti.

Avacado and Lime Salsa

This is super delicious!


Ingredients:

  • 1 packet of Italian salad dressing, made according to package directions
  • 2 avocados, peeled and diced
  • 4-5 roma tomatoes, diced
  • 1 can white corn, drained
  • 1 can black-eyed peas, drained (I used black beans)
  • ½ of a bunch of cilantro, washed and chopped
  • 2-3 limes squeezed
  • 7 green onions

Mix Salad dressing in a large glass bowl. Place all remaining ingredients in salad dressing and toss. Serve with whole grain tortilla chips.

Chicken Chili (regular or low fat)

Chicken Chili (Ronni's way)


1lb Chicken (breast or tenderloin work well)
1 medium onion chopped
1 1/2 tsp garlic powder
1 can chicken broth
1 can chopped green chilies
1 tsp salt1 tsp ground cumin
1 tsp dry oregano
1/2 tsp pepper
Throw everything in the crock pot and let it cook on low all day or at least 4 hours. The chicken can be frozen (you will need to cook it longer).

2 cans great northern beans
Add beans to chicken 1 hour before serving.

1 cup sour cream
1/2 cup whipping cream
Stir in sour cream and whipping cream 1/2 hour before serving.

Serve in bread bowls or with bread sticks.

*Low Fat *

I have really been trying to cook and eat better. We had this the other night and instead of sour cream I used PLAIN GREEK YOGURT (Greek yogurt is better because it is thicker you could use regular and just thicken it with cornstarch) and 2% Milk instead of cream. It wasn't as creamy but it tasted just as good and I didn't feel too bad about having seconds. Making the switch saved us around 400 Calories can't beat that! I also made the bread sticks with whole wheat flour and no one complained and everyone enjoyed our "low fat" chicken chili.

A year of slow cooking!

I found this great website through my cousin Jessica (not jessie this is my moms side) crockpot365.blogspot.com. Anyway, this website is great and I have found some really yummy stuff from soups, main dishes,complete meals (in the crockpot), and dessert. My new favorite is the Chicken Cordon Bleu. It is pretty healthy because you don't bread and fry it. Plus, you could use "Heart Healthy" or " Low Sodium" cream of chicken soup (or none at all just add a little chicken broth in the bottom) Here is the recipe:

Chicken Cordon Bleu
--4 chicken breast halves, pounded thin
--4-8 slices of ham
--4-8 slices of Swiss cheese--can of your favorite cream-of-something soup
--2 T low fat milk
--1/4 t salt
--1/4 t black pepper

The Directions. Use a 6 or 4qt crock pot depending on how many you are making. Spray crockpot with cooking spray.Pound chicken breasts flat (put them in a ziplock before you pound so chicken juice doesn't spray all over the kitchen)Put a slice of the ham and a slice of the swiss cheese on the chicken breast and roll it up. Put it into the crockpot, seam side down. If desired, top with another piece of ham and cheese. Continue with the other pieces. It's okay to stagger-stack the chicken. It will still cook nicely for you. open can of cream-of soup. Pour into crockpot. Put the 2T of low fat milk into your empty can and swirl it around to get the remaining stuck on good stuff. Pour that in, too.Cover and cook on low for 6-8 hours, or on high for 4-5. This is done when the chicken is cooked through and has begun to brown on top.

This was delightful. David and Chandler loved it so you know it has to be good. I served it with steamed asparagus, fruit salad and rolls.

Sweet Salsa Chicken


I have grown to love cilantro, so this family recipe has become a favorite:
Sweet Salsa Chicken
1 pkg. taco seasoning
4 chicken brasts (cooked and cubed)
2 T. oil
cook together until done

Sauce:
1 C. Salsa
1/4 C. water
1/4 C. apricot jam
1 T. cilantro (chopped)
1 T. lime juice
1 can black beans (drained and rinsed)
mix ingredients together and add to chicken - bring to boil and serve over rice

+++you can use less chicken if desired+++

PEANUT BUTTER TOFFEE CHEESECAKE BROWNIES




These are THE BEST brownie mixture I've ever made. And that's saying something because I consider brownies a food group of their own and have made quite a few recipes based on the fact that they say 'brownie' in the title.


I made it for the pinewood derby and EVERYONE wanted the recipe. Think Adam's Peanut Butter Cheesecake at the Cheesecake Factory. Two hints:


1. Serve well chilled. They are so much better cold. Make them a day ahead and refrigerate.


2. I never have cream on hand. Great trick I learned....put in a couple heaping spoonfulls of Cool-whip in it's place. Works great everytime.
