Santa Fe Chicken

1 Large Chicken Breast
1 Jar Pace Salsa
1 Can Black Beans
1 Can Corn
8 oz Cream Cheese

Place chicken, black beans, corn, and salsa in crockpot.  Cook on low for 6-8 hours.  Add cream cheese an hour before cook time is up.  Shred chicken and mix in cream cheese.  Serve over rice

Brown Sugar and Balsamic Glazed Pork Loin


This turns out really tender and juicy every time.

Ingredients:
1 (2 pound) boneless pork tenderloin (or regular pork loin)
1 teaspoon ground sage
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove garlic, crushed
1/2 cup water

Glaze
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce

Directions:
Combine sage, salt, pepper and garlic. Rub over roast. Place in slow cooker with 1/2 cup water. Cook on low for 6-8 hours. About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times during the last hour of cooking. Serve with remaining glaze on the side.

Servings: 6-8

Crockpot Cube Steak and Gravy

Cube steak   (I used a family size pack)
2 cans (10.75 ounce size) cream of mushroom soup
1 envelope onion soup mix
3/4  cup water
Salt and Pepper to taste

Directions:

Place all ingredients in a crock pot. Cook on low all day. Serve over rice, noodles, mashed potatoes or with your favorite side dishes.

Chicken and Broccoli Alfredo Casserole

Chicken and Broccoli Alfredo Casserole
Ingredients:
2 1/2 cups uncooked pasta (not quite the entire box- I used shells, but any kind would work! Whole wheat works great too)
2 cups broccoli (fresh or frozen)
1 1/2 lbs chicken breasts, cooked and chopped into bite-size pieces
1 (16 oz) jar alfredo sauce
1/2 cup shredded Parmesan cheese
1 1/2 cups mozzarella cheese
1/2 teaspoon garlic salt
1/4 teaspoon dried basil
salt and pepper to taste
1/2 cup Panko bread crumbs
2 tablespoons butter, melted
1/4 cup shredded Parmesan cheese

Directions:
Preheat oven to 350 degrees.
Prepare pasta as directed on package. Remove from heat, drain water, and dump pasta in a large bowl.
If using fresh broccoli, cut into bite-size pieces and place in a microwaveable-safe bowl. Add 2-3 tablespoons of water and cover the bowl with plastic wrap. Microwave for 3-4 minutes or until it reaches your desired crunchiness. If using frozen broccoli, prepare according to directions on package. Once finished cooking, place broccoli in the bowl with the pasta.
Dump the chicken, alfredo sauce, 1/2 cup Parmesan cheese and mozzarella cheese into the bowl and mix with the pasta and broccoli. Season with garlic salt, basil, and salt and pepper.
Spray a 9x13" pan with non-stick cooking spray and dump pasta/chicken mixture inside.
In a small bowl, mix the bread crumbs, melted butter, and 1/4 cup Parmesan cheese together. Sprinkle over the top of the casserole.
Bake for 25-30 minutes or until the cheese is melted and the edges are bubbling.
Serve with a green salad and these Easy Parmesan Knots for a complete meal!

Gooey Golden Grahams S'mores Treats

Our family loved these for FHE this week! Yummy s'mores without the fire!

Gooey Golden Grahams S'mores Treats
Ingredients:
8 cups Golden Grahams® cereal
5 cups miniature marshmallows
1 1/2 cups milk chocolate chips
1/4 cup light corn syrup
5 tablespoons butter or margarine
1 teaspoon vanilla
1 cup miniature marshmallows, if desired

Directions:
Measure the cereal into a large bowl. Grease a 13x9-inch pan with non-stick cooking spray. In another large microwavable bowl, microwave 5 cups marshmallows, the chocolate chips, corn syrup and butter uncovered on High for 2-3 minutes, stirring after every minute, until melted and smooth when stirred. Stir in vanilla.
Pour over cereal; quickly toss until completely coated. Stir in 1 cup marshmallows.
Press mixture evenly in pan, using back of spoon (or your hands- sometimes it's just easier that way). Let stand uncovered at least 1 hour, or refrigerate if you prefer a firmer bar. Store loosely covered at room temperature up to 2 days.

Can’t Leave Alone Bars


1 white cake mix

1/3 Cup Oil

2 Eggs

1 14oz. Can sweetened condensed milk

1 Cup semi-sweet chocolate chips

4 TBS ( ¼ C) margarine

 
Mix cake mix, eggs and oil. Spread 2/3 of batter in greased 9X13 pan with floured hands. Set other 1/3 aside. In microwave safe bowl pour milk, chocolate chips and cut up margarine. Microwave 45 sec., stir until smooth. Heat mixture more if needs to be more melted. Pour into pan over cake. Take remaining batter and drop by teaspoonfuls over chocolate mixture. Bake at 350 degrees for 20-25 minutes until it is golden on top. Let cool completely before cutting. ( I found if you put them in the fridge for a while they aren’t as gooey.) However you like them!

Faves Lately

Here are a few of the newest recipes I've tried that have become family faves! My favorite part? - they're easy throw together meals in the crockpot (except the chow mein).

Sweet & Sour Chicken:
1 cup pineapple juice, 1/2 cup packed brown sugar, 1/3 cup light soy sauce, 2 pounds chicken breast tenderloins. Cook on low 6-8 hrs and they should just fall apart. Serve over rice!
