Ingredients:
Graham Cracker Crust
- 1 1/2 cups graham cracker crumbs
- 1/3 cup white sugar
- 6 tbsp butter, melted
- 1/2 tsp cinammon
Cheesecake
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla
- 2 egggs
Directions:
- line muffin tins with foil liners.
- Mix crust ingredients, press into bottom of liners (you can use vanilla wafers if they fit your muffin tins and liners)
- Mix cream cheese, vanilla, and sugar with an elctric mixer on medium speed until well blended. Add eggs, and mix well. Pour over crust, filling 3/4 full.
- Bake for 25 minutes at 325 degrees. Remove from pan when cool. Chill.
- top with your favorite topping (I like to use cherry pie filling)
